    Creamy Italian Sausage Soup Recipe

     

    Looking for a cozy, flavorful, and easy dinner idea? This Creamy Italian Sausage Soup is the ultimate comfort food that combines savory sausage, tender pasta, and rich creamy broth all made in just one pot! It’s a hearty soup recipe that’s perfect for chilly nights or family dinners.

    Ingredients for Creamy Sausage Soup

    1 pound Italian sausage (casings removed)

    1 medium onion, diced

    2 cloves garlic, chopped

    ½ teaspoon ground fennel (optional, for added Italian flavor)

    ½ teaspoon red pepper flakes (optional, for a spicy kick)

    4 cups chicken broth

    1 (14.5 oz) can petite diced tomatoes

    8 oz pasta (like ditalini; use gluten-free pasta if needed)

    1 teaspoon Italian seasoning

    ½ cup grated Parmesan cheese

    4 oz cream cheese, softened

    ½ cup heavy cream

    Salt and black pepper, to taste

    1 tablespoon fresh chopped parsley (optional)

    Instructions:

    1. Brown the Sausage

    In a large pot or Dutch oven over medium heat, cook the Italian sausage and diced onion until sausage is fully browned and onions are tender. Break sausage into crumbles. Drain excess grease.

    2. Add Garlic and Spices

    Stir in chopped garlic, ground fennel, and red pepper flakes. Cook for 1 minute until fragrant.

    3. Simmer the Base

    Pour in the chicken broth, diced tomatoes, pasta, and Italian seasoning. Bring to a boil, then reduce heat and simmer for 6–8 minutes, or until pasta is al dente.

    4. Make it Creamy

    Add Parmesan cheese, cream cheese, and heavy cream. Stir well and cook for another 3–5 minutes, allowing the cheeses to melt and thicken the soup.

    5. Season and Finish

    Add salt and pepper to taste. Stir in chopped parsley if desired.

    6. Serve

    Ladle into bowls and enjoy this creamy sausage soup with warm crusty bread. It’s the perfect easy weeknight dinner!
