    Creamy Cucumber Shrimp Salad

     

    This Creamy Cucumber Shrimp Salad is a refreshing, light dish perfect for any meal. Juicy shrimp and crisp cucumbers are tossed in a tangy, creamy dressing, making it both satisfying and flavorful. It’s a quick and easy recipe that delivers a burst of freshness with every bite. Ideal for summer days or whenever you’re craving something cool and delicious!

    Ingredients:

    – 1 lb shrimp, peeled and deveined
    – 2 large cucumbers, peeled and diced
    – 1/2 cup Greek yogurt
    – 1/4 cup mayonnaise
    – 2 tbsp fresh dill, finely chopped
    – 1 tbsp lemon juice
    – 2 cloves garlic, minced
    – Salt and pepper to taste
    – Paprika and fresh parsley for garnish

    Instructions:

    1. Cook the Shrimp:

    – Boil a pot of salted water, then add the shrimp.
    – Cook until the shrimp are pink and opaque, about 2-3 minutes.
    – Immediately drain the shrimp and place them in an ice bath to cool. Once chilled, drain again and set aside.

    2. Prepare the Creamy Dressing:

    – In a mixing bowl, combine the Greek yogurt, mayonnaise, dill, lemon juice, minced garlic, salt, and pepper. Stir until the dressing is smooth and well-blended.

    3. Build the Salad:

    – Add the diced cucumbers and cooled shrimp to the bowl with the dressing.
    – Gently mix until the shrimp and cucumbers are thoroughly coated in the creamy dressing.

    4. Serve and Garnish:

    – Spoon the salad into a serving dish.
    – Garnish with a sprinkle of paprika and fresh parsley for a touch of color and extra flavor.
