Creamy Chicken Marsala Pasta

Ingredients:
For the Pasta:
1 lb pasta (shells, penne, or your favorite shape)
For the Chicken & Sauce:
1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
2 tbsp olive oil
2 tbsp butter
8 oz mushrooms (sliced)
2 shallots (finely chopped)
3 garlic cloves (minced)
1 cup non-alcoholic Marsala substitute (red grape juice + a splash of apple cider vinegar OR extra chicken broth)
1 cup chicken broth
1 cup heavy cream
½ cup grated Parmesan cheese
Salt & black pepper (to taste)
Instructions:
Cook the Pasta:
Boil a large pot of salted water and cook the pasta until al dente. Drain and set aside.
Sauté the Chicken:
Heat olive oil and butter in a large skillet over medium-high heat.
Add the chicken, season with salt and pepper, and cook for 5-7 minutes until golden brown. Remove and set aside.
Cook the Mushrooms & Aromatics:
In the same skillet, sauté the shallots for 2 minutes until softened.
Add garlic and cook for 1 minute until fragrant.
Toss in the mushrooms and sauté until browned (about 5 minutes).
Deglaze with Marsala Substitute:
Pour in the non-alcoholic Marsala alternative and scrape the bottom of the pan.
Let it simmer for 2-3 minutes until reduced by half.
Make the Creamy Sauce:
Add chicken broth, bring to a boil, then reduce heat and simmer for 5 minutes.
Stir in the heavy cream and Parmesan cheese. Let the sauce thicken for about 3 minutes.
Combine & Serve:
Return the cooked chicken to the pan, toss with the sauce, then mix in the drained pasta.
Stir well and season with additional salt and pepper, if needed.
Garnish with extra Parmesan cheese and fresh parsley.
