    Classic Slow Cooker Pot Roast Recipe

     

    Classic Slow Cooker Pot Roast Recipe

     

    This Classic Slow Cooker Pot Roast is the ultimate comfort food, perfect for family gatherings or cozy dinners. With tender chuck roast, hearty vegetables, and a rich, savory broth, each bite is full of flavor. The slow cooking process makes the meat melt-in-your-mouth delicious, and it’s easy to prep and let cook. Customize with potatoes or even mushrooms for a twist. Serve it with the warm, flavorful gravy for a meal everyone will love!

    Ingredients:

    3-4 pounds chuck roast

    1 tablespoon olive oil

    1 teaspoon salt

    1 teaspoon black pepper

    1 tablespoon garlic powder

    1 tablespoon onion powder

    4 carrots, peeled and cut into chunks

    4 large russet potatoes, peeled and cut into chunks

    1 onion, sliced

    3 cloves garlic, minced

    2 cups beef broth

    2 tablespoons Worcestershire sauce

    2 sprigs fresh thyme

    1 sprig fresh rosemary

    2 tablespoons cornstarch (optional, for thickening)

    Instructions:

    1. Sear the Roast:

    Heat olive oil in a skillet over medium-high heat.

    Season the chuck roast on all sides with salt, pepper, garlic powder, and onion powder.

    Sear the roast in the hot oil for 2-3 minutes on each side until browned, then transfer to the slow cooker.

    2. Prepare the Vegetables:

    Place carrots, potatoes, and onions in the bottom of the slow cooker to create a flavor base for the roast.

    3. Add Broth and Herbs:

    Pour beef broth over the roast and vegetables.

    Add Worcestershire sauce, minced garlic, thyme, and rosemary.

    4. Slow Cook:

    Cover and cook on low for 8-9 hours or high for 5-6 hours, until the meat is tender and falls apart.

    5. Thicken the Gravy (Optional):

    For a thicker gravy, remove 1/2 cup of cooking liquid, mix with 2 tablespoons of cornstarch, and return to the slow cooker. Let it cook for 10-15 minutes to thicken.

    6. Serve:

    Remove the roast from the slow cooker and shred into chunks.

    Serve with carrots, potatoes, and a ladle of the rich broth over everything.

    Tips:

    For extra depth, add a splash of red wine to the broth.

    Swap russet potatoes with sweet potatoes or baby red potatoes for a twist.

    Adding mushrooms enhances the flavor even more.
