    Classic French Beef Stew with Mushrooms

    Ingredients:

    2 lbs beef stew meat, cut into chunks

    2 tbsp olive oil

    1 onion, chopped

    3 cloves garlic, minced

    2 cups mushrooms, sliced

    2 carrots, sliced

    2 potatoes, cubed

    2 tbsp tomato paste

    2 cups beef broth

    1 cup water

    1 bay leaf

    1 tsp dried thyme

    Salt and pepper to taste

    Fresh parsley for garnish

    Instructions:

    1. Heat olive oil in a large pot over medium heat.

    2. Brown the beef chunks in batches, then set aside to retain moisture.

    3. In the same pot, sauté onion and garlic until softened and fragrant.

    4. Add mushrooms, carrots, and potatoes; cook for 5 minutes to enhance flavors.

    5. Stir in tomato paste, then add beef broth, water, bay leaf, and thyme to create a rich sauce.

    6. Return the browned beef to the pot, bring to a boil, then reduce to a simmer.

    7. Cover and cook for 1.5 to 2 hours until the beef is tender and flavors meld.

    8. Season with salt and pepper, garnish with fresh parsley before serving.
