    Chicken Rollatini is a delightful Italian-inspired dish that combines tender chicken breasts stuffed with savory pepperoni and gooey mozzarella cheese. This easy-to-make recipe is perfect for a weeknight dinner, offering a delicious blend of flavors in every bite. The chicken is rolled, breaded, and baked to golden perfection, creating a crispy exterior with a juicy, cheesy center. With a simple preparation and classic Italian ingredients, Chicken Rollatini is a crowd-pleaser that brings restaurant-quality taste to your home kitchen. Serve it with a side of pasta or a fresh salad for a complete and satisfying meal.

    Ingredients:

    For the Chicken:
    – 2 large chicken breasts
    – 8 slices of deli-style pepperoni
    – 4 slices of mozzarella cheese

    For the Breading:
    – 2 eggs, beaten
    – 1/2 cup Italian seasoned breadcrumbs
    – 1/2 cup grated Parmesan cheese
    – 1 tablespoon Italian seasoning
    – 1 teaspoon garlic powder
    – Salt and pepper to taste

    Directions:

    1. Prepare the Chicken: Slice each chicken breast lengthwise, cutting all the way through to create thin pieces. Cover with plastic wrap and pound each piece to 1/4” thickness with a meat mallet. This will ensure your chicken cooks evenly.

    2. Build the Rollatini: Place two slices of pepperoni and one slice of mozzarella cheese on each piece of chicken. Roll the chicken tightly around the filling, securing it with toothpicks to keep everything in place.

    3. Wrap and Chill: Cut four 12″x12″ pieces of plastic wrap. Place each rolled chicken breast on a piece of plastic wrap, then roll it tightly in the wrap. Refrigerate the wrapped chicken for 1 hour to help it hold its shape.

    4. Bread the Chicken: Set up two bowls—one with beaten eggs and another with a mixture of breadcrumbs, Parmesan, Italian seasoning, garlic powder, salt, and pepper. Unwrap the chicken rolls, dip each one in the egg, and then coat thoroughly in the breadcrumb mixture.

    5. Freeze and Bake: Place the breaded chicken rolls in the freezer for 15 minutes. Meanwhile, preheat your oven to 400°F. Chilling the rolls helps the breading stick better during baking. Once ready, place the rolls in a greased oven-safe dish, spray them with olive oil, and bake for 25-30 minutes.

    6. Serve: Before serving, check that the chicken is cooked through by cutting into one roll. Enjoy your Chicken Rollatini hot, with the melted mozzarella and pepperoni adding a delicious Italian twist!
