Ingredients (Serves 2):

For the Chicken:

2 large boneless, skinless chicken breasts

1 cup (100g) broccoli florets, finely chopped (steamed or blanched)

1/2 cup (50g) shredded cheddar cheese

1/4 cup (25g) grated Parmesan cheese

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and black pepper, to taste

2 tbsp olive oil

1/4 cup (10g) fresh parsley, chopped (for garnish)

For the Creamy Parmesan Sauce:

1/2 cup (120ml) heavy cream

1/4 cup (60ml) chicken broth

1/4 cup (25g) grated Parmesan cheese

1 clove garlic, minced

1/2 tsp dried Italian seasoning

Salt and black pepper, to taste

 

Instructions:

1. Prepare the Chicken:

Preheat oven to 375°F (190°C).

In a small bowl, mix broccoli, cheddar cheese, Parmesan, garlic powder, onion powder, salt, and pepper.

Cut a pocket into each chicken breast and stuff with the broccoli-cheese mixture. Secure with toothpicks if needed.

Season the outside with salt, pepper, and olive oil.

2. Sear the Chicken:

Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat.

Sear chicken 3–4 minutes per side until golden brown.

3. Make the Creamy Sauce:

Reduce heat to medium. Add garlic and sauté for 1 minute.

Stir in heavy cream, chicken broth, Parmesan, and Italian seasoning. Simmer 2–3 minutes until slightly thickened.

Season with salt and pepper.

4. Bake the Chicken:

Return chicken to the skillet and spoon sauce over top.

Transfer skillet to oven and bake 20–25 minutes, until chicken is fully cooked (165°F / 74°C).

5. Serve & Enjoy:

Let chicken rest for 5 minutes.

Garnish with parsley and drizzle with creamy Parmesan sauce before serving.
