    To make a really good cheesecake, you indeed need a type of cheese called “faisselle.” This fresh cheese made with pasteurized milk naturally has a slightly tangy taste. If unavailable, it has been replaced by an industrial cheese, Philadelphia, to which a touch of lemon has been added to achieve that slightly sharp note. Especially since the true faisselle cheese needs to be drained overnight, and its preparation takes more time.

    As for the cheesecake crust, it’s typically made with shortbread. However, another technique exists using speculoos.

    Cheesecake Recipe
    Ingredients for the crust:

    – 200g speculoos cookies
    – 50g butter

    Ingredients for the filling:

    – 500g sour cream cheese or faisselle cheese
    – 125g sugar
    – 25g flour
    – 25cl thick cream
    – three eggs

    Recipe steps:

    1. Crush the speculoos into crumbs and melt the butter.
    2. Mix the two together and spread the crust at the bottom of the dish.
    3. Mix the filling ingredients until homogeneous.
    4. Pour the mixture into the mold and bake for 50 minutes in an oven at 180 degrees Celsius.
    5. Let it cool after baking.
