    Cheese-Stuffed Meatloaf Recipe

     

    Looking for a family-friendly dinner that’s packed with flavor and loaded with melty cheese? This cheese-stuffed meatloaf is the ultimate comfort food classic, featuring a tender and juicy meatloaf made with lean ground beef, veggies, and Italian herbs all wrapped around a gooey, cheesy center. Whether you’re craving a hearty weeknight meal or planning a cozy Sunday dinner, this easy meatloaf recipe is a must-try!

    Ingredients:

    1½ pounds 93% lean ground beef

    1 small yellow onion, finely chopped

    1 medium carrot, finely chopped

    2 celery stalks, finely chopped

    3 garlic cloves, minced

    ½ cup fresh parsley, chopped

    1 cup dry breadcrumbs

    1 large egg

    ¼ cup milk

    2 teaspoons kosher salt

    1½ teaspoons Worcestershire sauce

    1 teaspoon dried Italian seasoning

    ½ teaspoon black pepper

    ¼ teaspoon red pepper flakes (optional, for a kick)

    8 oz fresh mozzarella or sharp cheddar cheese, cubed

    For the Glaze:

    ⅓ cup ketchup

    3 tablespoons brown sugar

    1 tablespoon yellow mustard

    ¼ teaspoon salt

    Instructions:

    1. Preheat your oven to 375°F (190°C). Line a 9×5-inch loaf pan with parchment paper for easy removal.

    2. In a food processor, pulse the chopped onion, carrot, celery, garlic, and parsley until finely chopped.

    3. In a large bowl, combine the processed veggies, breadcrumbs, egg, milk, and seasonings.

    4. Add the ground beef and gently mix just until combined don’t overwork the meat!

    5. Press half the meat mixture into the loaf pan and use a spoon to form a trench down the center.

    6. Fill the trench with the cubed cheese, then top with the remaining meat mixture, sealing the edges.

    7. Mix together the glaze ingredients and spread about ¼ cup over the top of the meatloaf.

    8. Place the loaf pan on a rimmed baking sheet and bake for 1 hour, or until the internal temp reaches 160°F.

    9. Let cool for 10 minutes, spread on the remaining glaze, lift out using the parchment, and slice.
