    Ingredients for Bolognese-Stuffed Zucchini Boats

    4 medium zucchini

    1 lb ground beef or turkey

    1 small onion, finely chopped

    2 cloves garlic, minced

    1 can (14 oz) crushed tomatoes

    2 tbsp tomato paste

    1 tsp dried oregano

    1 tsp dried basil

    Salt and black pepper, to taste

    1/2 cup shredded mozzarella cheese

    1/4 cup grated Parmesan cheese

    Olive oil, for drizzling

    Instructions: How to Make Bolognese-Stuffed Zucchini Boats

    1. Prepare the Zucchini Boats

    Preheat your oven to 375°F (190°C).
    Slice each zucchini lengthwise and scoop out the seeds to create hollow boats.
    Place them cut-side down on a baking sheet, drizzle with olive oil, and season with salt and pepper.
    Bake for 15 minutes to soften.

    2. Make the Hearty Bolognese Sauce

    In a large skillet over medium heat, cook ground meat until browned.
    Add the onion and garlic, sauté until translucent.
    Stir in crushed tomatoes, tomato paste, oregano, and basil.
    Simmer uncovered for 15-20 minutes until thickened.
    Season with salt and pepper to taste.

    3. Stuff the Zucchini

    Remove the zucchini from the oven and turn them cut-side up.
    Fill each boat with the rich Bolognese sauce, pressing it in gently.

    4. Add Cheesy Topping

    Sprinkle mozzarella and Parmesan cheese evenly over the top.

    5. Bake Until Bubbly

    Return to oven and bake for another 10-15 minutes, or until the cheese is melted and golden brown.

    Garnish & Serve

    Top with chopped fresh basil or parsley if desired. Serve hot with a green salad or garlic bread for a well-rounded meal.
