Blackened Shrimp Avocado Cucumber Bites Recipe:

    Ingredients:
    – 1 Avocado
    – 2 tablespoons Cilantro and/or parsley, chopped
    – 1 Cucumber
    – 1 Green onion, thinly sliced
    – 1 tablespoon Lemon juice
    – 1/4 cup Remoulade sauce
    – 1 tablespoon Creole seasoning
    – Salt and cayenne pepper, to taste
    – 1 tablespoon Oil
    – 1 pound shrimp, peeled and deveined

    Instructions:
    1. Prepare the shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. Season the shrimp with creole seasoning, salt, and cayenne pepper, ensuring they are evenly coated.
    2. Heat the oil: In a large skillet, heat oil over medium-high heat until it shimmers.
    3. Cook the shrimp: Once the oil is hot, add the seasoned shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Avoid overcrowding the skillet to ensure proper searing.
    4. Prepare the avocado and cucumber: While the shrimp are cooking, peel and pit the avocado, then slice it into thin strips. Slice the cucumber into rounds or long strips.
    5. Assemble the bites: Once the shrimp are cooked, remove them from the skillet and set aside. On a serving platter or plate, arrange the cucumber slices. Top each cucumber slice with a slice of avocado, followed by a cooked shrimp.
    6. Finish with remoulade sauce: Drizzle each shrimp with a small amount of remoulade sauce. Garnish the bites with chopped cilantro and/or parsley and thinly sliced green onions.
    7. Serve: Serve the Blackened Shrimp Avocado Cucumber Bites immediately as an appetizer or party snack. Enjoy the flavorful combination of blackened shrimp, creamy avocado, crisp cucumber, and tangy remoulade sauce!
