    This Beef Estofado is a rich, hearty stew bursting with bold Mediterranean-inspired flavors. Tender beef chunks simmer in a fragrant blend of spices, tomatoes, and tangy ingredients, creating a mouthwatering dish perfect for family dinners. It’s cooked effortlessly in an Instant Pot, ensuring melt-in-your-mouth texture in under an hour. Pair it with rice, mashed potatoes, or crusty bread for a comforting meal. Packed with warmth and aroma, it’s a must-try for cozy nights!

    Ingredients:

    2 lbs (900g) beef chuck, cut into 1-inch cubes

    2 tbsp olive oil

    1 large onion, chopped

    1 lb pearl onions or small shallots, peeled

    4 garlic cloves, minced

    2 tbsp tomato paste

    1 can (14 oz) crushed tomatoes

    2 tbsp apple cider vinegar or white vinegar

    1/2 tsp ground cinnamon

    1 tsp dried oregano

    1/2 tsp allspice

    1 bay leaf

    2 cups beef broth

    Salt and black pepper to taste

    Fresh parsley for garnish

    Instructions:

    1. Sear the Beef:

    Set your Instant Pot to Sauté mode and heat the olive oil.

    Add the beef cubes in batches, searing them until browned on all sides. Remove the beef and set aside.

    2. Sauté Aromatics:

    Add the chopped onion and pearl onions to the pot. Cook for 3-4 minutes until softened.

    Stir in the minced garlic and cook for an additional minute until fragrant.

    3. Build the Flavor Base:

    Mix in the tomato paste, crushed tomatoes, apple cider vinegar (or white vinegar), cinnamon, oregano, allspice, and bay leaf. Stir well to combine.

    4. Pressure Cook the Estofado:

    Return the beef to the pot and pour in the beef broth. Season with salt and black pepper to taste.

    Secure the Instant Pot lid, set the valve to Sealing, and pressure cook on High for 35 minutes.

    Allow the pressure to release naturally for 10 minutes, then perform a quick release.

    5. Final Touches:

    Open the lid, stir the stew, and adjust seasoning if needed.

    Remove the bay leaf and serve hot.
