    Ingredients:

    For the Sponge:
    – 4 large eggs, separated
    – 3/4 cup granulated sugar
    – 1 cup all-purpose flour
    – 1 tsp baking powder
    – 1/4 tsp salt
    – 2 ripe bananas, mashed
    – 1 tsp vanilla extract

     

    For the Filling:
    – 1 cup heavy whipping cream
    – 1/4 cup powdered sugar
    – 1 tsp vanilla extract
    – 2 ripe bananas, sliced

    For the Caramel Sauce:
    – 1 cup brown sugar
    – 1/2 cup heavy cream
    – 4 tbsp unsalted butter
    – 1 tsp vanilla extract
    – Pinch of salt

    For Garnish:
    – Crushed graham crackers
    – Banana slices
    – Powdered sugar

     

    Directions:

    1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper for easy removal.
    2. In a mixing bowl, beat the egg yolks with 1/2 cup of granulated sugar until the mixture becomes light and fluffy. Stir in the mashed bananas and vanilla extract for a delightful aroma.
    3. In another bowl, whisk the egg whites until soft peaks form. Gradually add 1/4 cup of granulated sugar while whisking until stiff peaks form, creating a fluffy texture.

     

    4. Sift together the all-purpose flour, baking powder, and salt. Gently fold this mixture into the yolk mixture, then carefully fold in the beaten egg whites, ensuring a light and airy batter.
    5. Spread the batter evenly onto the prepared pan, ensuring uniform thickness. Bake for 12-15 minutes or until the sponge springs back when lightly touched.
    6. Once baked, immediately turn the sponge out onto a clean towel dusted with powdered sugar. Roll up the sponge and towel together, then let it cool completely to retain moisture.
    7. For the filling, beat the heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form, creating a luscious whipped cream filling.
    8. Unroll the sponge and spread the whipped cream evenly over it, creating a creamy layer of goodness. Arrange the sliced bananas on top for added sweetness.
    9. Carefully re-roll the cake without the towel, ensuring a tight roll to hold the filling securely.

    10. To make the indulgent caramel sauce, combine the brown sugar, heavy cream, butter, vanilla extract, and a pinch of salt in a saucepan over medium heat. Stir constantly until the mixture thickens and coats the back of a spoon.
    11. Drizzle the warm caramel sauce generously over the rolled cake, creating a heavenly caramelized finish. Sprinkle with crushed graham crackers and banana slices for an added crunch and burst of flavor.

     

    12. Dust with powdered sugar for the finishing touch, adding a touch of elegance to this divine dessert.
