    Ingredients for West Lake Beef Soup

    6 oz ground beef

    1/2 teaspoon sesame oil

    2 1/2 tablespoons cornstarch

    3 tablespoons water

    14 oz store-bought chicken broth

    1 1/3 cups water

    3 dashes white pepper

    1/2 teaspoon salt (adjust to taste)

    2 large eggs, lightly beaten

    1/2 cup fresh cilantro (coriander leaves),

    Instructions: How to Make Chinese West Lake Beef Soup

    1. Marinate the beef: In a small bowl, mix the ground beef with sesame oil. Let it sit for 10 minutes to absorb the flavor.

    2. Prepare a cornstarch slurry: In another bowl, combine 2 tablespoons of cornstarch with 3 tablespoons of water. Stir until smooth and set aside.

    3. Cook the broth: In a medium pot over medium heat, bring the chicken broth and 1 1/3 cups of water to a boil. Add the marinated beef and stir to break up clumps. Simmer for 3–4 minutes or until the beef is fully cooked.

    4. Season the soup: Add white pepper and salt to taste.

    5. Thicken the soup: Slowly stir in the cornstarch slurry, mixing continuously until the soup thickens slightly.

    6. Add egg ribbons: Reduce the heat to low. Gently drizzle in the beaten eggs while stirring in one direction to create silky egg strands like a classic egg drop soup.

    7. Finish and garnish: Turn off the heat and stir in freshly chopped cilantro for a burst of herbal freshness.

    8. Serve hot and enjoy! Best enjoyed warm with steamed rice or as a light starter.
