    Delicious Peanut Butter Cup Cake Roll Recipe – Perfect for Special Occasions

    Ingredients for Peanut Butter Cup Cake Roll:

    For the Cake:
    – 3 large eggs
    – ¾ cup granulated sugar
    – 2 teaspoons brewed coffee or water
    – 1 teaspoon vanilla extract
    – ¼ cup unsweetened cocoa powder
    – ¼ teaspoon salt
    – 1 teaspoon baking powder
    – ¾ cup all-purpose flour
    – Powdered sugar (for rolling)

     

    For the Filling & Topping:
    – 2 ounces cream cheese, softened
    – ⅓ cup peanut butter
    – 1 cup powdered sugar
    – 1 teaspoon vanilla extract
    – 4 tablespoons + ⅔ cup heavy whipping cream
    – 7 Reese’s peanut butter cups, chopped (about 1 cup)
    – 1 cup semi-sweet chocolate chips

    Directions for Making the Peanut Butter Cup Cake Roll:

    Make the Cake:
    1. Preheat oven to 350°F.
    2. Prepare a jelly roll pan with foil and cooking spray.
    3. Mix eggs, granulated sugar, brewed coffee (or water), and vanilla extract in a large bowl.
    4. Add unsweetened cocoa powder, salt, baking powder, and all-purpose flour. Mix until combined.
    5. Spread the batter evenly in the prepared pan.
    6. Bake for 10-15 minutes until the cake springs back when touched.
    7. Roll the warm cake in a powdered sugar-coated towel and let it cool completely.

    Prepare the Filling:
    1. Beat softened cream cheese and peanut butter until smooth.
    2. Add powdered sugar, vanilla extract, and 4 tablespoons of heavy whipping cream. Mix until creamy.
    3. Fold in chopped Reese’s peanut butter cups.

    Assemble the Cake Roll:
    1. Unroll the cooled cake and spread the peanut butter filling evenly over it.
    2. Re-roll the cake gently but tightly.
    3. Chill the rolled cake in the refrigerator.

    Make the Topping:
    1. Microwave semi-sweet chocolate chips and ⅔ cup heavy whipping cream in 30-second intervals, stirring until smooth.
    2. Chill the ganache until it thickens slightly.

     

    Decorate the Cake Roll:
    1. **Pour** the chocolate ganache over the chilled cake roll.
    2. **Top** with additional chopped Reese’s peanut butter cups.
    3. **Chill** again, then slice and enjoy each decadent bite of this nostalgic Peanut Butter Cup Cake Roll!
