    Easy Mini Meatloaf Muffins Recipe with Mashed Potato Frosting”

    Ingredients:

    – 1 lb ground beef
    – 1/2 cup breadcrumbs
    – 1/4 cup ketchup
    – 1/4 cup milk
    – 1 small onion, finely chopped
    – 1 egg
    – 1 teaspoon Worcestershire sauce
    – 1/2 teaspoon garlic powder
    – Salt and pepper to taste

     

    For the Mashed Potato “Frosting”:

    – 4 large potatoes, peeled and cubed
    – 1/4 cup milk
    – 2 tablespoons butter
    – Salt and pepper to taste
    – Fresh chives or parsley for garnish

     

    Instructions:

    1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
    2. In a large mixing bowl, combine ground beef, breadcrumbs, ketchup, milk, chopped onion, egg, Worcestershire sauce, garlic powder, salt, and pepper. Mix until well combined.
    3. Press the meatloaf mixture into the greased muffin tin cups, filling each to the top.
    4. Bake the mini meatloaf muffins for 20-25 minutes or until cooked through and tops are browned.
    5. While the meatloaf bakes, prepare the mashed potato “frosting”. Boil the cubed potatoes in salted water until tender, approximately 15-20 minutes.
    6. Drain the boiled potatoes and mash them with milk, butter, salt, and pepper until smooth and creamy.
    7. Once the meatloaf muffins are done baking, allow them to cool slightly before removing from the muffin tin.
    8. Using a piping bag or spoon, add a dollop of mashed potato “frosting” on top of each mini meatloaf muffin, resembling frosting on cupcakes.
    9. Garnish the meatloaf muffins with freshly chopped chives or parsley for added flavor and color.
