Elevated Homemade Spaghetti Sauce
Ingredients:
– 2 tablespoons of olive oil
– 1 finely chopped onion
– 2 cloves of minced garlic
– 1 grated carrot
– 1 finely chopped celery stalk
– 2 pounds of ripe tomatoes, diced, or 1 can (28 ounces) of crushed tomatoes
– 1 teaspoon of dried oregano
– 1 teaspoon of dried basil
– 1/2 teaspoon of dried thyme
– 1/2 teaspoon of dried rosemary
– Salt and pepper to taste
– 1 tablespoon of tomato paste (optional, for added richness)
– 1 tablespoon of balsamic vinegar (optional, for enhanced depth of flavor)
– 1 tablespoon of sugar (optional, to balance acidity)
Directions:
1. Heat olive oil in a large saucepan over medium heat. Add onion, garlic, carrot, and celery. Cook, stirring occasionally, until the vegetables soften, about 5-7 minutes.
2. Add diced tomatoes or crushed tomatoes to the saucepan, along with oregano, basil, thyme, and rosemary. Season with salt and pepper.
3. If using tomato paste, balsamic vinegar, or sugar, add them to the saucepan.
4. Bring the sauce to a simmer, then reduce the heat to low. Let it cook uncovered for 30-45 minutes, stirring occasionally, until it thickens to your desired consistency.
5. Taste and adjust seasoning if needed. Add more sugar if the sauce is too acidic.
6. Once ready, remove from heat and let it cool slightly before serving. Use it to top your favorite pasta or store it in an airtight container in the refrigerator for up to one week. Enjoy the elevated flavors!
