Hearty Beef Barley Soup Recipe:
Ingredients:
– 1 pound boneless chuck roast, trimmed and cut into 1-inch pieces
– 1 1/2 cups thinly sliced carrots
– 1 1/2 cups thinly sliced celery
– 2/3 cup chopped onion
– 10-12 mushrooms, sliced
– 2 tablespoons beef base (different from beef broth)
– 8-10 cups water
– 1 or 2 large bay leaves
– 1 cup uncooked pearl barley
– 1/2 teaspoon salt
– 1/2 teaspoon pepper
– 1 tablespoon minced garlic
Instructions:
1. In a skillet, brown the beef pieces until they are nicely browned, stirring frequently.
2. Remove the browned beef from the skillet and transfer it to a crockpot.
3. Add the sliced carrots, celery, chopped onion, sliced mushrooms, beef base, water, minced garlic, and bay leaves to the crockpot.
4. Cook on high heat for 2 hours.
5. After 2 hours, add the pearl barley to the crockpot and turn the heat down to low. Continue cooking until the vegetables and beef are tender, stirring occasionally.
6. Once the soup is cooked and the vegetables and beef are tender, stir in the salt and pepper to taste.
