Cinnamon Roll French Toast Roll-Ups
Ingredients:
– 1/2 cup + 2 tablespoons unsalted butter, softened
– 1/4 cup light brown sugar
– 1 tablespoon cinnamon
– 8 slices thick, soft bread
– 2 eggs
– 1/4 cup milk
– 1 teaspoon vanilla extract
– 1/4 cup granulated sugar (for assembly)
– 1 teaspoon cinnamon (for assembly)
– 1-1/2 tablespoons unsalted butter, softened (for assembly)
– 1/2 cup cream cheese, room temperature (for icing)
– 1/4 cup confectioners’ sugar (for icing)
Directions:
1. Prepare cinnamon butter by mixing softened butter, light brown sugar, and cinnamon in a bowl.
2. Trim crusts off bread slices, flatten them, and spread cinnamon butter evenly over each slice. Roll them tightly.
3. Whisk together eggs, milk, and vanilla extract to create French toast mixture. Dip each cinnamon roll-up in the mixture, ensuring they are fully coated.
4. Fry the coated roll-ups in melted butter until they are golden brown on all sides.
5. Mix granulated sugar and cinnamon for the coating. Roll the cooked roll-ups in this mixture until they are evenly coated.
6. For the icing, blend together softened butter, cream cheese, and confectioners’ sugar until smooth. Use it as a drizzle or dip for the roll-ups. Enjoy!
