Savory Casserole with Russet Potatoes, Smoked Sausage, and Creamy Cheese Sauce
Ingredients:
– 3 cups of Russet potatoes, peeled and cubed, boiled until tender
– 1 lb thinly sliced smoked sausage
– 4 tbsp butter
– 4 tbsp flour
– 2 cups half & half or milk
– Salt & pepper to taste
– 1/2 lb Velveeta cheese, cubed
– 1/2 cup shredded sharp cheddar cheese
– 1/4 tsp smoked paprika
Instructions:
1. In a large skillet over medium-low heat, sauté the smoked sausage until lightly browned.
2. Lightly spray a 9×13″ baking dish with non-stick cooking spray. Transfer the cooked potatoes and sausage to the dish, distributing evenly.
3. Increase the heat to medium and add butter to the skillet. Once melted, whisk in the flour and cook for about a minute to remove the floury taste.
4. Slowly add the half & half, whisking constantly until thickened.
5. Stir in the Velveeta, smoked paprika, salt, and pepper, until melted and smooth.
6. Pour the cheese sauce evenly over the potatoes and sausage.
7. Sprinkle shredded cheddar cheese on top.
8. Bake at 350 degrees Fahrenheit for 35-45 minutes, until potatoes are tender and the casserole is golden brown. Enjoy!
