One-Pot Creamy Chicken Pot Pie Pasta (without the puff pastry)
This recipe is a twist on classic chicken pot pie, transformed into a comforting and creamy pasta dish made in just one pot!
Ingredients:
- 8 oz penne pasta
- 2 tablespoons butter
- 1 small onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup milk
- 2 cups cooked chicken, diced
- 1 cup frozen peas
- 1 teaspoon dried thyme
- Salt and black pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C). (Optional: If you prefer a crispy topping, preheat your broiler to high during the last few minutes of cooking.)
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In the same large pot used for cooking the pasta, melt butter over medium heat. Add diced onion, carrots, and celery. Cook until vegetables are softened, about 5-7 minutes.
- Add minced garlic and cook for an additional 1-2 minutes, until fragrant.
- Sprinkle all-purpose flour over the vegetables and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
- Gradually whisk in chicken broth and milk until smooth. Bring the mixture to a simmer, stirring frequently, until it thickens.
- Stir in diced chicken, frozen peas, dried thyme, salt, and black pepper. Cook for another 2-3 minutes.
- Add the cooked penne pasta to the pot and stir until well coated with the creamy sauce.
- (Optional: Broil for a few minutes if you desire a crispy top on the pasta.)
