    Ingredients:

    For the Chicken:

    4 boneless, skinless chicken breasts (about 1.5 lbs)

    1/2 cup breadcrumbs

    1/4 cup grated Parmesan cheese

    2 tablespoons chopped fresh parsley

    1 teaspoon dried oregano

    1/2 teaspoon garlic powder

    1/4 teaspoon salt

    1/8 teaspoon black pepper

    1 egg, beaten

    Olive oil spray

    For the Cheesy Potato Bake:

    4 medium potatoes, peeled and cubed

    1 onion, chopped

    2 cloves garlic, minced

    1/2 cup chicken broth

    1/4 cup butter

    1 cup shredded cheddar cheese

    Salt and pepper to taste

    Instructions:

    1. Prep and Coat the Chicken:

    Preheat your oven to 375°F (190°C).

    In a shallow bowl, combine breadcrumbs, Parmesan cheese, parsley, oregano, garlic powder, salt, and black pepper.

    Dip each chicken breast into the beaten egg, then coat evenly with the breadcrumb mixture.

    Arrange the coated chicken breasts on a parchment-lined baking sheet. Lightly spray the tops with olive oil spray for extra crispiness.

    2. Bake the Chicken:

    Bake for 25–30 minutes or until the chicken is golden brown and cooked through (internal temperature should reach 165°F/74°C).

    3. Prepare the Cheesy Potato Bake:

    While the chicken is baking, melt butter in a large skillet over medium heat.

    Add chopped onion and garlic; sauté until softened (about 3–4 minutes).

    Add the cubed potatoes and chicken broth; season with salt and pepper.

    Cover and cook for 10–15 minutes until the potatoes are tender.

    Transfer to a baking dish, sprinkle with shredded cheddar cheese, and bake for 10–15 minutes until the cheese is melted and bubbly.
