Ingredients:
2 cups (250g) all-purpose flour
1 cup (200g) sugar
½ cup (115g) softened butter
1 cup (150g) raisins
1 cup (240ml) water
1 tsp baking soda
1 tsp ground cinnamon
½ tsp ground cloves
½ tsp ground nutmeg
½ tsp salt
2 eggs, beaten
1 tsp vanilla extract
Instructions:
Preheat your oven to 350°F (175°C). Grease and flour an 8-inch (20cm) square cake pan.
In a saucepan, bring the raisins and water to a boil. Simmer for 10 minutes, then remove from heat and let cool slightly.
In a mixing bowl, beat butter and sugar until light and fluffy.
Add the beaten eggs and vanilla extract, mixing well.
In a separate bowl, sift together flour, baking soda, cinnamon, cloves, nutmeg, and salt.
Gradually mix the dry ingredients into the creamed butter mixture, alternating with the raisin water. Stir in the cooked raisins.
Pour the batter into the prepared cake pan.
Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Enjoy this moist, spiced raisin cake with a dusting of powdered sugar or a dollop of whipped cream!
