Slow Cooker Caramelized Onions Pasta Recipe

This Slow Cooker Caramelized Onions Pasta is a rich and flavorful dish perfect for cozy dinners. The slow-cooked onions bring out a deep, sweet, and savory flavor that pairs beautifully with your favorite pasta. Simple ingredients like garlic, thyme, and Parmesan elevate the dish to gourmet status. It’s versatile, easy to customize with proteins or veggies, and ideal for busy days. A comforting, crowd-pleasing meal that’s as satisfying as it is delicious!

    Ingredients:

4 large yellow onions, thinly sliced

3 tablespoons olive oil or unsalted butter

    1 teaspoon salt

1 teaspoon sugar (optional, for extra sweetness)

    4 cloves garlic, minced

    1/2 teaspoon dried thyme

    1/2 teaspoon dried rosemary

    1/4 cup vegetable broth

1 pound of your favorite pasta (spaghetti, fettuccine, or penne recommended)

    1/2 cup grated Parmesan cheese

    Fresh parsley, chopped (for garnish)

    Salt and pepper to taste

    Directions:

    1. Prepare the Onions: Thinly slice the onions. Add them to your slow cooker along with olive oil or butter, salt, and optional sugar. Stir well to coat.

    2. Caramelize the Onions: Cook on low for 8-10 hours, stirring occasionally, until the onions are golden and caramelized.

    3. Add Flavor: About 30 minutes before the onions are finished, stir in garlic, thyme, rosemary, and vegetable broth. Let the flavors meld as the mixture cooks.

    4. Cook the Pasta: While the onions finish, prepare your pasta according to the package instructions. Reserve 1 cup of pasta water before draining.

    5. Combine and Finish: Mix the caramelized onions with the pasta, adding reserved pasta water as needed for a smooth, silky sauce. Stir in Parmesan cheese and season with salt and pepper.

    6. Garnish and Serve: Top with freshly chopped parsley and serve immediately.

    Variations & Tips:

Creamy Upgrade: Add a splash of heavy cream for a luscious sauce.

Veggie Boost: Toss in sautéed mushrooms, roasted cherry tomatoes, or wilted spinach.

Protein Option: Top with grilled chicken, sausage, or shrimp for a heartier meal.

Vegan Friendly: Use nutritional yeast instead of Parmesan and olive oil instead of butter.
