    Slow Cooker Beef Stew Recipe

     

    This Slow Cooker Beef Stew is a classic comfort dish, perfect for cozy family dinners or meal prepping. Tender chunks of beef, hearty vegetables, and rich, savory broth come together effortlessly in the slow cooker. It’s seasoned with thyme, garlic, and Worcestershire for a bold, aromatic flavor. The recipe is easy to prepare, with just 15 minutes of prep time and minimal cleanup. Serve it with crusty bread for a satisfying, no-fuss meal!

    Ingredients:

    1/4 cup all-purpose flour

    2 teaspoons dried thyme

    1 1/2 teaspoons kosher salt (plus more for seasoning)

    1 teaspoon freshly ground black pepper (plus extra for serving)

    1 teaspoon garlic powder

    1 medium yellow onion, diced

    4 medium carrots, peeled and sliced into 1-inch rounds

    2 celery stalks, sliced into 1/2-inch pieces

    1 pound Yukon gold or red potatoes, cut into 1-inch chunks

    2 1/4 pounds boneless beef chuck roast or stew meat, trimmed and cubed

    2 dried bay leaves

    1 1/2 cups beef broth

    1 tablespoon tomato paste

    1 tablespoon Worcestershire sauce

    Chopped fresh parsley (optional, for garnish)

    Instructions:

    1. Prepare the Flour Mixture:
    In a 6-quart slow cooker, mix 1/4 cup all-purpose flour, 2 teaspoons dried thyme, 1 1/2 teaspoons kosher salt, 1 teaspoon black pepper, and 1 teaspoon garlic powder.

    2. Prep the Vegetables:
    Dice the onion, slice the carrots and celery, and chop the potatoes into 1-inch pieces.

    3. Coat the Beef:
    Trim excess fat from the beef chuck roast and cut into 1 to 1 1/2-inch cubes. Toss the beef in the flour mixture until evenly coated.

    4. Assemble the Stew:
    Add the coated beef, chopped vegetables, and 2 dried bay leaves to the slow cooker.

    5. Mix the Sauce:
    In a bowl, whisk together 1 1/2 cups beef broth, 1 tablespoon tomato paste, and 1 tablespoon Worcestershire sauce. Pour the mixture over the beef and veggies.

    6. Cook:
    Cover and cook on LOW for 6-8 hours, or HIGH for 4 hours, until the beef is tender and the flavors meld together.

    7. Season and Serve:
    Taste the stew and adjust with more kosher salt and black pepper as needed. Garnish with chopped parsley and additional black pepper if desired.

    Tips & Storage:

    Leftovers: Store in an airtight container in the fridge for up to 4 days.
