    Lemon Herb Grilled Chicken with Creamy Avocado Sauce

     

    This Lemon Herb Grilled Chicken with Avocado Cream Sauce is a refreshing, flavorful dish perfect for any meal. The juicy, zesty chicken pairs beautifully with the creamy, tangy avocado sauce for a satisfying taste experience. With fresh herbs and citrus, it’s a light, healthy option that still feels indulgent. Perfect for grilling season, it makes a great main dish alongside salads or grilled veggies.     Ingredients:

    For the Chicken:

    4 boneless, skinless chicken breasts

    2 tbsp olive oil

    Juice and zest of 1 lemon

    2 cloves garlic, minced

    1 tsp dried oregano

    1 tsp dried thyme

    Salt and freshly ground black pepper, to taste

    For the Avocado Cream Sauce:

    1 ripe avocado

    1/2 cup Greek yogurt (or sour cream)

    1 tbsp lime juice

    1 clove garlic, minced

    1/4 cup fresh cilantro or parsley, chopped

    Salt and pepper, to taste

    Water, as needed for consistency

    Instructions:

    1. Marinate the Chicken:
    In a large bowl, mix olive oil, lemon juice, zest, minced garlic, oregano, thyme, salt, and pepper. Add chicken breasts and coat well in marinade. Marinate for at least 30 minutes, or up to 2 hours in the fridge for enhanced flavor.

    2. Grill the Chicken:
    Preheat grill or stovetop skillet over medium-high heat, lightly greasing the grates or skillet. Place chicken on the grill, discarding the marinade. Grill for 6-7 minutes on each side or until the internal temperature reaches 165°F (74°C). Let rest for a few minutes after cooking.

    3. Prepare the Avocado Cream Sauce:
    In a food processor, combine avocado, Greek yogurt, lime juice, garlic, cilantro or parsley, salt, and pepper. Blend until smooth and creamy. Adjust the thickness by adding water, if necessary. Taste and adjust seasoning as desired.

    4. Serve:
    Slice grilled chicken and arrange on a platter. Drizzle generously with the creamy avocado sauce or serve it on the side. Garnish with extra herbs or lemon slices for a fresh touch.

    Tips:

    Add basil or dill to the avocado sauce for a twist in flavor.

    Great for meal prep; refrigerate for up to a few days.
