    This Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken is a flavorful and satisfying dish, perfect for a quick and healthy dinner. Tender chicken breasts are filled with a savory blend of roasted red pepper, spinach, mozzarella, and Parmesan cheese for an impressive meal.

    Ingredients for Roasted Red Pepper and Mozzarella Stuffed Chicken:

    4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness

    1 roasted red bell pepper, diced

    1 cup fresh spinach, chopped

    1/2 cup grated mozzarella cheese

    1/4 cup grated Parmesan cheese

    1/4 cup breadcrumbs

    1 egg, beaten

    1/4 teaspoon salt

    1/4 teaspoon black pepper

    Instructions:

    1. Prepare the Filling: In a medium bowl, combine the diced roasted red bell pepper, chopped spinach, mozzarella cheese, Parmesan cheese, breadcrumbs, beaten egg, salt, and pepper. Stir well to create a delicious and cheesy filling.
