    White Chocolate Raspberry Cookies

     

    White Chocolate Raspberry Cookies

     

    Looking for a sweet treat that’s packed with flavor? These White Chocolate Raspberry Cookies are a match made in dessert heaven! Featuring rich, creamy white chocolate chips and tangy raspberry jam, these cookies offer the perfect balance of sweetness in every bite. Whether you’re planning a party or craving an indulgent snack, this recipe is a must-try!

    Ingredients:

    1 cup unsalted butter, room temperature

    1/2 cup granulated sugar

    1/2 cup packed brown sugar

    1 large egg

    2 teaspoons vanilla extract

    2 1/4 cups all-purpose flour

    1/2 teaspoon baking soda

    1/2 teaspoon salt

    1 cup white chocolate chips

    1/2 cup raspberry jam

    Pink food coloring

    Instructions:

    1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

    2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.

    3. In a large mixing bowl, cream the room-temperature unsalted butter, granulated sugar, and brown sugar with a hand or stand mixer. Beat until fluffy (about 2-3 minutes).

    4. Add the egg and vanilla extract, beating until fully incorporated.

    5. Gradually mix in the dry ingredients just until combined. Be careful not to overmix the dough!

    6. Scoop the cookie dough using a tablespoon, flattening each scoop slightly. Add a small spoonful of raspberry jam to the center, then fold the dough around the jam to enclose it.

    7. Place the filled dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 12-15 minutes, or until the edges are lightly golden.

    8. While the cookies cool, melt the white chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.

    9. Split the melted chocolate into two bowls, adding a few drops of pink food coloring to one. Stir until the color is well-mixed.

    10. Drizzle the cooled cookies with both white and pink chocolate. Let the chocolate set before serving these delicious White Chocolate Raspberry Cookies!
