Leftover Roasted Lamb Gyros Recipe
Ingredients:
– 1 ⅔ cups leftover roast lamb, thinly sliced
– 1-2 tsp olive oil
– 1 tsp fresh oregano (or ¼ tsp dried)
– ¾ tsp fresh thyme (or ¼ tsp dried)
– ¾ tsp fresh rosemary (or ¼ tsp dried)
– ½ tsp ground cumin
– Salt and pepper, to taste
– Lemon juice, to taste
– 4 pita breads or flatbreads
– 1 large ripe tomato, sliced
– 1 medium red onion, thinly sliced
– ½ English cucumber, thinly sliced
– 2 baby gem lettuces, leaves separated
– Tzatziki sauce (prepared in advance)
Directions:
Prepare the Pita Bread:
1. Preheat the oven to 350°F.
2. Dampen a large piece of parchment paper, scrunch it, and then wring out the excess water.
3. Stack the pita breads, wrap them in the parchment paper, and place in the oven for 10-15 minutes until warmed through.
Season the Lamb:
1. In a bowl, toss the sliced lamb with olive oil, fresh herbs, cumin, salt, and pepper.
2. Heat a skillet over medium-high heat and add the seasoned lamb. Cook until crispy, about 5 minutes.
Assemble the Gyros:
1. Lay a warm pita bread on a plate.
2. Add a portion of the crispy lamb.
3. Top with sliced tomato, red onion, cucumber, and lettuce leaves.
4. Drizzle with tzatziki sauce.
5. Roll up the pita to enclose the filling and enjoy your delicious leftover roasted lamb gyros!
