    Chipotle Shrimp, Avocado, and Mango Rice Bowls

     

    Chipotle Shrimp, Avocado, and Mango Rice Bowls

    Serves: 4

    Ingredients:
    For the Chipotle Shrimp:
    – 1 lb Large shrimp, peeled and deveined
    – 2 tsp Chipotle chili powder
    – 1/2 tsp Paprika
    – 1/2 tsp Ground cumin
    – 2 cloves Garlic, minced
    – 2 tbsp Lime juice
    – 3 tbsp Olive oil
    – Salt and pepper to taste

    For the Rice Bowls:
    – 1 cup White or brown rice, cooked
    – 1 Avocado, sliced
    – 1 Mango, diced
    – 1 cup Roasted corn
    – 1 Red pepper, diced
    – 2 Green onions, thinly sliced
    – 1/4 cup Fresh cilantro, chopped
    – 1/4 cup Fresh mint leaves, chopped
    – 1 Serrano pepper, thinly sliced (optional)

    For the Dressing:
    – 1 tbsp Lime zest
    – 2 tbsp Lime juice
    – 1 tbsp Mango jam
    – 1 tbsp Tequila (optional)
    – 3 tbsp Extra virgin olive oil
    – Salt and pepper to taste

     

    Instructions:
    1. Marinate the Shrimp: In a bowl, mix chipotle chili powder, paprika, ground cumin, minced garlic, lime juice, olive oil, salt, and pepper. Add shrimp, toss to coat, and marinate for 15-20 minutes.
    2. Cook the Shrimp: Heat a skillet over medium-high heat. Cook shrimp for 2-3 minutes on each side until pink and cooked through. Set aside.
    3. Prepare the Rice Bowls: Divide cooked rice among serving bowls. Top with chipotle shrimp, avocado slices, diced mango, roasted corn, diced red pepper, sliced green onions, chopped cilantro, chopped mint leaves, and sliced serrano pepper (if using).
    4. Make the Dressing: Whisk lime zest, lime juice, mango jam, tequila (if using), olive oil, salt, and pepper in a small bowl.
    5. Assemble the Bowls: Drizzle dressing over the assembled rice bowls.
    6. Serve immediately with extra lime wedges on the side if desired. Enjoy the vibrant and flavorful bowls!
